<dcterms:abstract xml:lang="fr">Les émulsions doubles, notamment les systèmes eau-dans-huile-dans-eau (E/H/E), sont des systèmes multiphasiques utilisés pour la co-encapsulation de composés bioactifs hydrophiles et lipophiles dans les domaines pharmaceutique, alimentaire et cosmétique. Les émulsions doubles à forte phase interne aqueuse offrent une capacité de chargement élevée et permettent la libération contrôlée, la protection de molécules sensibles et le masquage de goûts indésirables. Cependant, leur application reste limitée par leur instabilité thermodynamique, liée à la coalescence, aux fuites et au gonflement osmotique. Ce travail porte sur leur développement et leur stabilisation par différentes stratégies : structuration par hydrogel d’alginate, coques de silice, coques lipidiques à base de cire et nanoémulsions pour étudier la microviscosité interne. L’objectif est d’améliorer la stabilité, l’intégrité structurale et les performances de libération.</dcterms:abstract>
<dcterms:abstract xml:lang="en">Double emulsions, particularly water-in-oil-in-water (W/O/W) systems, are multiphase carriers used for the co-encapsulation of hydrophilic and lipophilic bioactive compounds in pharmaceutical, food, and cosmetic applications. High internal water phase double emulsions offer high loading capacity and enable controlled release, protection of sensitive molecules, and masking of undesirable taste. However, their application remains limited by thermodynamic instability, including coalescence, leakage, and osmotic swelling. This work focuses on their development and stabilization using different strategies: alginate hydrogel structuring, silica shells, wax-based lipid shells, and nanoemulsions to study internal microviscosity. The objective is to improve stability, structural integrity, and release performance.</dcterms:abstract>
